There are a few different places you'll see ratings on Untappd, on Beer and Brewery pages, and Top Rated global and local pages. This guide will help you understand what ratings are displayed where, how ratings are calculated, and answer some common questions about ratings!
Beer
The Beer Pure Average is the rating that you see on the beer page, search results, lists, etc. This is calculated by a Pure Average of the Beer's ratings as displayed below.
Brewery
The Brewery Average is the rating that you see on the brewery page, the brewery map, etc. This is calculated by an average of all the Beers as displayed below.
Top Rated

Beer - A beer must have 150 ratings to qualify for the Top Rated list.

Local
This is the rating displayed in the Local tab of the Top Rated Beer list on the Discover page. This rating is calculated by a Bayesian Average of beers checked-in within the last 15 days in the selected radius of the search area. The reasoning for this is to provide a Top Rated list of beers that could be available within the local area searched. The formula is displayed below.

Global
This is the rating displayed in the Global tab in the Top Rated Beer list on the Discover page. This rating is calculated by a Bayesian Average of all beers. The formula is displayed below.

A Bayesian Average is a great tool to use for calculating review rankings. Think about it for a moment, you don't want to see beers with only ten 5-cap ratings win all the rewards, likewise you don't want to see a beer with only two 1-cap ratings get thrown under a bus either. A Bayesian Average treats beers with the belief that there is already a wholly agreed upon average score before any actual ratings are submitted, then each good rating moves the beer higher and each bad rating moves it lower. This is, of course, oversimplified but it is easier to visualize than complex formulas.

If I rated a beer multiple times how is that rating determined?

When you rate a beer all previous ratings are averaged up and applied to the beer. You can rate as many times as you want but you only get 1 rating per beer per user.

What happens to my rating if I delete my check-in?

If this is your only check-in to that beer your rating will be removed. If you have multiple check-ins to that beer, your rating for that beer will still exist but will not include the rating on the check-in that you deleted.

No! If you leave the rating blank it won't count towards the beers total.
